Recipe of the Month - Spicy Parsnip Soup
2 tbsp olive oil
1 onion, chopped
3 cloves garlic, peeled and crushed
1 tsp ground ginger
1 tsp ground cumin
1 tsp garam masala
4 large parsnips (about 800g), peeled and chopped
750ml vegetable stock
Sea salt and freshly ground black pepper
1 Heat 1 tbsp of oil in a large pan and gently sauté the onions for a few minutes. Add the garlic and spices and stir through.
2 Add the parsnips and the remaining oil. Give the mixture a stir, cover the pan with a lid and cook over low heat for 10-15 minutes until the parsnips are soft.
3 Pour in the stock. Bring to the boil and season well. Simmer for 15 minutes.
4 Liquidise the soup in a blender. Reheat and adjust the consistency
and seasoning, adding a little boiling water if it is too thick.
